Chocolate Chia Pudding
Simple and delicious.
Whenever we add Chia seeds to our recipe, we increase nutritional value and health benefits of our meal, since Chia seeds are a rich source of protein, omega-3 fatty acids, fibres, antioxidants and minerals. When soaked, Chia seeds regulate digestion, hydrate the body, promote muscle recovery after sports activity and give the body a long-lasting feeling of satiety. When mixed with liquid, they absorb the liquid and form a gel-like substance that is called “Chia gel”. It is this gelatinous substance that can be usefully used in healthy and delicious pudding recipes.

Preparation:
Pour coconut milk in a bowl. Add a scoop of chocolate protein and chia seeds and mix together all the ingredients. Place in a fridge for at least 1 hour in order to allow a gel-forming reaction and get dense structure. It is important to obtain a smooth mixture without lumps. The result is even better if you leave the pudding in the fridge over night, but who would want to wait for so long to have a taste of this delicious dessert. :)
Take the bowl from the fridge and serve the pudding in glasses or smaller cups, with coconut flakes and banana bites.
Tips:
You can replace coconut milk with cow milk or some other plant based milk/drink.
You can add squashed banana or some other fruit puree (raspberry, mango, strawberry) to the pudding before serving.
If you prefer a denser pudding, use ground chia seeds (grind them beforehand).
